Ingredients

Dough Ingredients

  • 4 cups All-purpose flour Stick to regular flour, avoid substitutes.
  • 2 teaspoons Instant yeast Use quick yeast to save time.
  • 1/4 cup Sugar White or raw sugar can be used.
  • 1 teaspoon Salt Just a pinch is enough.
  • 1 cup Milk Whole or any milk available.
  • 1/4 cup Butter Soft and unsalted for best texture.
  • 2 large Eggs Room temperature preferred.
  • 1/2 cup Ube halaya Purple yam jam, not ube powder or extract.
  • 1 teaspoon Ube extract Optional, but enhances color.
  • 1 cup Breadcrumbs For rolling before baking.

Instructions

Preparation

  • Warm the milk until cozy, sprinkle in the yeast and sugar, let it froth.
  • Add flour, eggs, salt, ube halaya, ube extract, and softened butter to the mixture.
  • Knead until the dough is smooth and add more ube extract if needed.
  • Cover the dough and let it rise until doubled, approximately 1 hour.

Shaping and Baking

  • Roll the dough into small balls. Optionally, stuff with cheese.
  • Roll balls in breadcrumbs and place on a tray for further rising.
  • Allow to rise again until puffy.
  • Bake at 350°F for about 18 minutes or until lightly golden.

Notes

Brush warm pandesal with melted butter for a glossy finish. For fluffiness, let dough rest longer before shaping. Store leftovers in an airtight container and warm slightly in the microwave before serving.
