Ingredients

For the ice cream sandwiches

  • 2 scoops of ube ice cream Can be store-bought or homemade.
  • 6 soft cookies or sweetbread rolls Pandesal or buttery sandwich bread works well.
  • optional sprinkles, mini chocolate chips, or toasted coconut Add for extra fun toppings.
  • 1 tbsp butter Use for making cookies softer.

Instructions

Prepare the ice cream

  • Let the ube ice cream sit out for a few minutes to soften, making it easier to spread.

Assemble the sandwiches

  • Take your chosen cookies and split them open if needed.
  • Drop a fat scoop of ube ice cream in the middle.
  • If using bread, slice it but don’t cut all the way; it should resemble an ice cream sub.
  • Flatten gently to keep the ice cream from oozing out.
  • Top with optional sprinkles or chocolate chips.
  • If the cookies are crumbly, a dab of melted butter helps keep them soft.

Freeze and serve

  • Place the assembled sandwiches in the freezer on a tray for about 30 minutes.
  • Serve them stacked on a plate or wrapped in wax paper for a grab-and-go treat.
  • Enjoy them on a hot day or while binge-watching your favorite shows.
