Ingredients

Main Ingredients

  • 1 kilo pork belly, cut up chunky or shoulder, if you’re feeling a little healthy
  • 1/2 cup soy sauce any brand but Silver Swan is the classic
  • 1/3 cup vinegar don’t substitute with calamansi
  • 1 bulb garlic, smashed use all of it
  • 2 pieces bay leaves they look weird but add awesome taste
  • 2 teaspoons whole black peppercorns
  • 1 cup water
  • 1 tablespoon sugar optional, but adds some sweetness
  • to taste salt always added after cooking

Optional Ingredients

  • potatoes or hard-boiled eggs to add if desired

Instructions

Preparation

  • Sear the pork using the instant pot’s sauté function until it starts to brown.
  • Pour in the soy sauce, vinegar, garlic, bay leaves, peppercorns, and water.
  • Do not stir yet; let the ingredients sit for a bit.
  • Set the instant pot to manual for 25 minutes.
  • When the timer goes off, release the steam carefully.

Finishing Touches

  • Stir the mixture and adjust seasoning with sugar or salt as needed.
  • Allow the dish to sit for five minutes before serving.

Notes

Don't skip the garlic for the best flavor. Overcooking isn't an issue, but avoid keeping it on 'keep warm' for too long as it might become too soft.
