Ingredients

Noodles and Protein

  • 100-120 g Pancit canton noodles, dry curly Per serving
  • 1 tbsp Oil Any neutral cooking oil works
  • 2-3 cloves Garlic, minced More if you love garlic
  • 0.5 small onion Onion, sliced thin Half a small onion
  • 1 handful Veggies (shredded cabbage, carrots, green beans, bell pepper) Use any combination
  • 1 cup Water or broth Around 3/4 cup to soften noodles

Sauce Ingredients

  • 1 tbsp Soy sauce To start
  • 1 tbsp Oyster sauce For savory sweetness
  • 0.5 tsp Sugar To balance flavors
  • pinches Black pepper A few pinches to taste
  • 1 squeeze Calamansi or lemon For brightness
  • to taste Chili flakes or small fresh chili Optional heat

Garnishes

  • to taste Chopped scallions Optional garnish
  • to taste Toasted garlic Optional garnish
  • to taste Sesame oil Optional garnish

Instructions

Cooking the Noodles

  • Heat a small pan or pot over medium heat. Add oil, then sauté the onion and garlic until fragrant.
  • If using protein, add it now and warm it through.
  • Add your veggies and stir for 1 to 2 minutes to soften slightly while keeping them crisp.
  • Pour in water or broth and bring it to a gentle simmer.
  • Add dry canton noodles straight to the pan, turning them as they soften.
  • Ensure that the noodles are evenly soaked and do not flood the pan.

Mixing the Sauce

  • While the noodles soften, stir in soy sauce, oyster sauce, sugar, and black pepper.
  • Taste and adjust the flavor as needed by adding more soy, oyster sauce, or citrus.
  • For a glossy finish, whisk cornstarch with water and stir in for the last 30 seconds.

Serving

  • Once the noodles are glossy and bouncy, slide everything into a warm bowl.
  • Top with optional garnishes like toasted garlic, scallions, or chili.
  • Serve with hot tea or iced calamansi juice.
