Ingredients

Dry Ingredients

  • 1 cup All-purpose flour
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1/4 cup Sugar (brown or white)

Wet Ingredients

  • 1 cup Milk (dairy or unsweetened oat milk)
  • 1 large Egg
  • 2 tbsp Melted butter or neutral oil
  • 1/2 cup Ube halaya (preferred) or ube extract
  • 1 tsp Vanilla extract (optional) Adds flavor

Instructions

Preparation

  • Mix the dry ingredients in one bowl and the wet ingredients in another bowl.
  • Pour the wet ingredients into the dry ingredients and stir just until you do not see dry flour.
  • Stir in ube halaya or a few drops of ube extract.
  • Let the batter sit for 5 minutes while your waffle maker heats up.

Cooking

  • Grease the mini waffle maker lightly.
  • Spoon in batter, close, and cook until the steam slows down and the waffles look set.
  • The first batch is your 'test batch' to determine the cooking time.

Notes

Store mini ube waffle bites in an airtight container up to 3 days. Reheat in a toaster oven or air fryer for crispy edges.
