Ingredients

For the flan

  • 10 pieces egg yolks Just yolks; save the whites for another use.
  • 1 can (14 ounces) sweetened condensed milk
  • 1 can (12 ounces) evaporated milk
  • 1 teaspoon vanilla extract Use good quality if available.

For the caramel

  • 1 cup white sugar For caramelizing.

Preparation

  • Start by caramelizing the sugar in a pan over low heat until it turns golden brown. Pour the caramel into your baking pan and tilt it to cover the bottom.
  • In a mixing bowl, gently whisk together the egg yolks, sweetened condensed milk, evaporated milk, and vanilla extract until well combined.

Baking

  • Pour the custard mixture over the caramel.
  • Place the baking pan in a larger tray filled with hot water to create a water bath.
  • Bake in the oven at 350°F (175°C) for 45 to 50 minutes, or until the middle jiggles slightly but is not runny. Cool then chill in the fridge.
  • After chilling, flip it over onto a plate to serve.

Notes

For variations, consider swapping white sugar for brown sugar for richer caramel, adding lime zest for flavor, or using dairy alternatives like almond or oat milk. Chill for several hours before serving to ensure the flan holds its shape.
