Ingredients

Main Ingredients

  • 500 g Pork shoulder or pork belly, preferably with some fat for flavor and juiciness
  • 5 tbsp Brown sugar, or more if you need that extra sweet edge
  • 1.5 tsp Salt
  • 1 tbsp Soy sauce
  • 2 cloves Garlic, minced
  • 0.5 tsp Black pepper
  • 1 tbsp Pineapple juice Secret trick—super yummy
  • 1-2 drops Red food coloring Can be skipped, but it's tradition

Instructions

Preparation

  • Chop the pork into thin slices, about half an inch thick.
  • In a bowl, combine the pork with brown sugar, salt, soy sauce, garlic, black pepper, pineapple juice, and food coloring. Massage the ingredients into the pork.
  • Cover the bowl and marinate in the fridge for at least 1 hour, or overnight for best results.

Cooking

  • Heat a skillet and add the marinated pork without any additional oil.
  • Once the pork starts to sizzle, add a splash of water and let it simmer until cooked through.
  • Cook until the liquid is almost dry, then let the pork fry in its marinade until caramelized at the edges.

Notes

Serve with warm garlic rice and a fried egg for a classic silog style breakfast. A vinegar dip enhances the flavors.
