Ingredients

Chicken Seasoning

  • 3-4 lbs chicken cut into serving pieces (1.4 to 1.8 kg)
  • 2.5 tablespoons coarse sea salt (37.5 g)
  • 0.5 teaspoon ground black pepper (2.5 g)
  • 2 teaspoons garlic powder (6 g)
  • 1 teaspoon onion powder (3 g)

Frying Ingredients

  • 3/4 cup all-purpose flour (90 g)
  • 1.5 cups cooking oil (360 ml)

Instructions

Preparation

  • In a large mixing bowl, combine the coarse sea salt, ground black pepper, garlic powder, and onion powder.
  • Arrange the chicken pieces in the mixing bowl and thoroughly rub the spice mixture all over the chicken to ensure it is well-coated.
  • Cover the bowl with plastic wrap or a lid and refrigerate the chicken for 3 to 5 hours to allow the flavors to penetrate the meat.

Cooking

  • Heat the cooking oil in a pan over medium heat until it is hot.
  • Place the all-purpose flour in a resealable bag. Add 2 to 3 pieces of seasoned chicken to the bag, seal it, and shake gently to coat the chicken in flour.
  • Once the oil is ready, carefully place the coated chicken pieces into the pan. Fry the chicken on medium heat for 5 minutes.
  • Turn the chicken over and fry the other side for another 5 minutes.
  • For an even crispier finish, turn the chicken over again and fry both sides for an additional 4 minutes or until golden brown.
  • Remove the fried chicken from the pan, allowing excess oil to drip off, and transfer it to a serving plate.

Notes

Serve hot with banana ketchup and a side of white rice for a complete meal. This dish is perfect for gatherings and weeknight dinners.
