Instructions

Preparation

  • In a bowl, mix soy sauce, calamansi or lemon juice, brown sugar, minced garlic, and a little black pepper.
  • Add the chicken and let it marinate for at least 30 minutes.

Cooking

  • Cook the marinated chicken by pan frying or baking until fully cooked. Let it rest before slicing.
  • In a small bowl, combine mayonnaise, banana ketchup, and a splash of calamansi to create the sauce.

Assembly

  • Toss shredded cabbage with salt and a little mayo or vinegar.
  • Toast the buns by buttering the cut sides and cooking in a pan until golden.
  • Assemble by placing the bun bottom, a little sauce, chicken, slaw, and then the bun top.

Notes

For best taste, try to keep the chicken pieces small for securing flavor and ease of serving. Also, serve sauce on the side for those who prefer varying degrees of sauciness. Pair with chips or a refreshing fruit platter for a balanced meal.
