Ingredients

Main Ingredients

  • 1 kg Chicken pieces (drumsticks, thighs, or mix, skin-on)
  • 2 medium Potatoes, peeled and chunked
  • 2 Carrots, cut into bite-sized pieces
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 1 can Tomato sauce Use a regular-sized can
  • to taste Fish sauce or salt
  • to taste Black pepper, fresh cracked
  • 2 tbsp Oil (veggie oil, olive oil, or any available)
  • 1-2 Bell peppers (red or green, sliced) Add towards the end of cooking

Instructions

Preparation

  • Heat a splash of oil in a pot. Sauté the garlic and onion until they smell fragrant.
  • Add the chicken pieces and brown them slightly on all sides.

Cooking

  • Pour in the tomato sauce and stir, scraping the bottom to avoid sticking.
  • Cover and let it simmer on low heat for 15-20 minutes.
  • Add the potatoes and carrots, cooking for another 10 minutes.
  • Add the bell peppers in the last few minutes to retain their crunch.

Serving

  • Serve hot with garlic fried rice or plain white rice. Optionally, garnish with fresh herbs.

Notes

Filipino chicken afritada is best the next day. It can also be frozen for future meals, and it tastes better after a night in the fridge.
