Ingredients

Main Ingredients

  • 2 large flour tortillas Flour is best for the texture.
  • 2 pieces longganisa-style chicken sausage Store-bought or homemade.
  • 1 cup cooked garlic fried rice Leftover works fine.
  • 2 pieces eggs Beaten lightly with a dash of salt.
  • 2 tbsp oil For cooking.
  • Salt and pepper To taste.

Optional Toppings

  • shredded cheese For creaminess.
  • sriracha For a spicy kick.
  • fried onions For added crunch.
  • diced tomatoes For freshness.

Instructions

Cooking

  • Heat a pan with a little oil, then cook your longganisa-style chicken. Slice into rounds or crumble, whatever's easier.
  • Wipe the pan, then scramble your eggs—keeping them soft.
  • Warm up your garlic fried rice if it’s cold (microwave is fine).
  • On a flat surface, lay out your tortilla. Layer the fried rice, longganisa chicken, and eggs in the center.
  • Add extras if desired—cheese, sriracha, whatever you like.
  • Fold the burrito sides in, then the bottom up, and roll snugly. Optionally, toast in a hot pan for extra crunch.
  • Slice it (if sharing) or eat it with both hands.

Notes

For make-ahead, wrap in foil and refrigerate. Microwave to reheat. Experiment with different proteins and toppings for variety.
