  • 1/2 cup soy sauce or salt Replace soy sauce with salt for Adobo sa Asin
  • 6 cloves garlic, minced Essential for marinating
  • 2 pcs bay leaves Add for a traditional flavor
  • 1 tbsp peppercorns Adjust according to taste

  • 1 cup coconut milk For creamy variations like Adobong Manok sa Gata
  • 2 cups potatoes, diced For heartier versions
  • 2 cups string beans or sitaw For Adobong Baboy at Sitaw
  • 2 cups squid, cleaned For Adobong Pusit
  • 2 pcs chillies, chopped For spicy variations
  • 1 duck adobo, if desired For Adobong Itik

Instructions

Preparation

  • Marinate your chosen protein in vinegar, soy sauce (or salt), garlic, bay leaves, and peppercorns for at least 30 minutes, or preferably overnight.

Cooking

  • Heat a pot over medium heat and add the marinated protein along with the marinade.
  • Bring to a boil, then reduce the heat, and let it simmer until the meat is tender and the sauce has thickened, about 30-45 minutes.
  • Stir occasionally, and add optional ingredients like coconut milk or potatoes if desired.
  • Adjust seasoning and serve hot with rice.

Notes

Feel free to experiment with your own ingredients and ratios; adobo is quite forgiving. It's recommended to taste as you go to achieve your preferred flavor.
