Ingredients

Base Ingredients

  • 2 cups Old fashioned oats For the best chewy texture
  • 1 cup All purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup Butter, melted and slightly cooled
  • 1 cup Brown sugar Helps with chewiness
  • 2 large Eggs
  • 1/2 cup Ube halaya or ube jam Brings flavor and color
  • 1 tsp Ube extract Optional, for boosted aroma
  • 1 tsp Vanilla extract
  • 1 tbsp Milk or coconut milk Just a splash if the batter is too thick

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Line an 8x8 pan with parchment paper.
  • In a bowl, stir together oats, flour, baking powder, and salt.
  • In a second bowl, mix melted butter and brown sugar until glossy. Add eggs, ube halaya, vanilla, and ube extract if using. Mix until smooth.
  • Combine wet and dry ingredients, stirring just until there is no dry flour visible. If the mixture looks stiff, add milk or coconut milk.
  • Press the mixture into the prepared pan, smoothing the top. Optionally, sprinkle a few oats on top.

Baking

  • Bake for 18 to 25 minutes, until the edges are set and the center is not jiggly. Do not overbake to preserve chewiness.
  • Cool completely, then chill for at least 1 hour before slicing.

Notes

These bars are great for breakfast or snacks, and they freeze well for later enjoyment. Adjust sweetness based on the ube jam's sweetness and consider mix-ins like chocolate chips or coconut for added flavor.
