Ingredients

Main Ingredients

  • 20 to 24 pieces lumpia or spring roll wrappers, thawed if frozen
  • 10 to 12 sticks quick-melt cheese or low-moisture mozzarella, cut into 3 to 4 inch batons
  • 2 tablespoons all-purpose flour mixed with 3 tablespoons water to make a sealing paste
  • 2 cups neutral oil for frying for shallow frying

Optional Add-Ins

  • 1 pinch sugar to sprinkle inside for that sweet-salty vibe
  • to taste paprika or chili flakes for a mild kick
  • to taste nori strips for a fun flavor twist

Instructions

Preparation

  • Set up a clean work area with wrappers, cheese batons, a dish of flour-water paste, and a plate lined with parchment or a clean kitchen towel.
  • Chill the cheese for 15 to 20 minutes before rolling to prevent blowouts.
  • Divide your add-ins: sprinkle sugar for sweet or use paprika/chili flakes for savory.
  • Keep a damp towel over the stack of wrappers to prevent drying and cracking.

Rolling the Wrappers

  • Place one wrapper diagonally. Add a cheese baton near the bottom point, leaving a half-inch border.
  • Fold the bottom point up over the cheese. Fold in the left and right corners, then roll tightly towards the top point.
  • Brush the edge with flour paste before finishing the roll to secure.
  • Line the rolled sticks seam side down on a plate. Cover and chill if not frying immediately.

Frying Instructions

  • Heat oil in a skillet to around 350 F (175 C) for shallow frying.
  • Test a stick in the oil. Fry for 45 to 60 seconds per side until golden.
  • Fry 5 to 6 at a time, avoid overcrowding. Drain on a rack.
  • For air frying, brush with oil and air fry at 375 F for 6 to 8 minutes.

Dipping Sauces

  • Prepare various dips such as sweet chili sauce, banana ketchup mayo, garlic ranch, honey mustard, and spicy vinegar.

Notes

Refrigerate leftovers in an airtight container for up to 3 days. Reheat in a skillet or air fryer to retain crispness.
