Ingredients

Main Ingredients

  • 1 pound chicken thighs or breasts, sliced thin Thighs are juicier, but breasts can be used if sliced thinly.
  • 1/4 cup brown sugar White sugar can be used as a substitute.
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons calamansi juice or lemon juice
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tablespoon oil For browning.
  • 4 buns soft slider buns or pandesal Lightly toasted.
  • 2 eggs fried Optional for adding inside the sliders.
  • to taste mayo or garlic butter Optional for spreading on buns.

Instructions

Preparation

  • Slice chicken into thin pieces so it cooks quickly.
  • Mix brown sugar, soy sauce, minced garlic, and calamansi juice in a bowl. Taste and adjust for the right flavor.
  • Toss the chicken in the marinade and let it sit for at least 4 hours, preferably overnight.

Cooking

  • Heat a nonstick pan over medium heat and add a small splash of water.
  • Once the water evaporates, add a tiny bit of oil and let the chicken brown until caramelized edges appear.

Assembly

  • Toast the buns lightly and layer in the tocino, fried egg, and a smear of mayo or garlic butter.

Notes

Don’t rush the browning process for the best flavor and texture. Adjust sweetness and sodium levels according to personal preference.
