  • 2 pounds minced pork lungs Traditional ingredient for Bopis
  • 1/2 cup vinegar
  • 1 teaspoon salt Adjust to taste
  • 2 tablespoons canola oil For cooking
  • 1 large onion, peeled and chopped
  • 4 cloves garlic, peeled and minced
  • 1 tablespoon fish sauce
  • 1 large carrot, peeled and diced
  • 1/2 large green bell pepper, seeded and chopped
  • 1/2 large red bell pepper, seeded and chopped
  • 4 pieces Thai chili peppers, stemmed and chopped Adjust for desired spiciness

Instructions

Preparation

  • In a bowl, combine the minced pork lungs, vinegar, and salt. Marinate for about 10 minutes.

Cooking

  • In a wide skillet over medium heat, heat the canola oil.
  • Add the chopped onions and minced garlic to the skillet. Cook until softened and fragrant.
  • Incorporate the fish sauce into the onion and garlic mixture.
  • Add the marinated minced pork lungs to the skillet. Bring the mixture to a boil.
  • Cook, stirring occasionally, for about 20 to 30 minutes or until the liquid is mostly absorbed and the meat begins to sizzle.
  • Add the diced carrot, chopped green bell pepper, chopped red bell pepper, and chopped Thai chili peppers.
  • Continue to cook for about 2 to 3 minutes or until the vegetables are tender-crisp.

Notes

Bopis is best served hot, accompanied by steamed rice to balance the spiciness. Garnish with additional sliced chili peppers for those who love a fiery kick. It can also be served in tacos or as a standalone appetizer at gatherings.
