Ingredients

Pasta

  • 400 g Spaghetti pasta 14 oz

Meat

  • 500 g Ground beef 1 lb
  • 250 g Lean beef sausages, sliced diagonally 9 oz
  • 250 g Local NZ sausages, sliced into strips 9 oz

Sauce

  • 400 g Chopped tomatoes 14 oz
  • 700 g Bolognese sauce 2 bottles, 24.7 oz each
  • 140 g Tomato paste 5 oz
  • 250 ml Spicy tomato ketchup (optional) 8.5 oz
  • 1-2 tbsp Sugar
  • Salt and pepper to taste

Vegetables

  • 1 Large onion, chopped
  • 1 clove Garlic, pressed
  • 400 g Button mushrooms, sliced thinly 14 oz

Others

  • 2 tbsp Butter
  • Freshly grated cheddar cheese (for serving) if Parmesan is not available

Instructions

Cooking the Pasta

  • Cook pasta in a pot of boiling water with a little cooking oil and salt over low to medium heat, stirring constantly until almost al dente, about 7-8 minutes. Drain and set aside.

Preparing the Sauce

  • In a large saucepan, heat butter over low heat. Add garlic and cook until aromatic, about 1 minute.
  • Increase the heat to high and add ground beef, cooking until browned, about 5 minutes.
  • Add chopped onion, tomatoes, sliced mushrooms, and sausages. Season with salt and pepper, cooking until the sausages are browned and the tomatoes are mashed, approximately 5-7 minutes.
  • Stir in Bolognese sauce and tomato paste. Add 1-2 tablespoons of sugar and cheddar cheese. Adjust the sauce thickness with additional water if needed, and cook for about 5 minutes over low heat.
  • Transfer about two-thirds of the mixture into a serving bowl.

Combining and Serving

  • Toss the cooked pasta with the remaining sauce in the saucepan over low heat, mixing thoroughly.
  • Turn off the heat and let it sit for a few minutes to absorb the flavors.
  • Serve the pasta with additional sauce and a sprinkle of grated cheese.

Notes

Bolognese Pasta with Sausages is best served hot and garnished with freshly grated cheddar or Parmesan cheese. Pair it with a side salad and garlic bread. Leftovers can be stored in the refrigerator for deepened flavors.
