  • 1 pound large shrimp (31-40 size) (450 g)
  • 1/2 cup mayonnaise (120 ml)
  • 1/4 cup cheddar cheese, shredded (30 g)
  • 1 teaspoon sugar (5 g)

Instructions

Preparation

  • Twist the head to remove and discard. Cut the shell from the head along the middle of the body to the tail.
  • Make an incision along the length of the shrimp but do not cut through. Pry open to butterfly, leaving the shell intact.
  • Rinse under cold running water and drain well.

Mixing

  • In a bowl, combine mayonnaise, cheddar cheese, and sugar. Stir until well combined and sugar is dissolved.

Baking

  • Arrange shrimp in a single layer on a baking sheet.
  • Spoon about a teaspoonful of the cheese mayo mixture on each shrimp and spread to cover the flesh.
  • Bake in a 400°F (200°C) oven for about 8 to 10 minutes or until cooked through and the top is golden and bubbly.
  • Remove from heat and serve hot.
