Ingredients

For the Chicken Filling

  • 1 lb Ground chicken Or finely chopped cooked chicken
  • 1 medium Onion, minced
  • 3 cloves Garlic, minced
  • 1 medium Carrot, grated or finely diced
  • 1 cup Cabbage, shredded very thin (optional) Adds texture
  • 2 tbsp Soy sauce
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 pinch Sugar (optional) For deeper flavor
  • 1 tbsp Oyster sauce (optional) For richer flavor

For the Wrappers

  • 10 sheets Lumpia wrappers or spring roll wrappers Use thin kind if substituting
  • 1 tbsp Oil spray or a light brushing of oil Helps achieve golden brown

Instructions

Preparation of Filling

  • Pre-cook the chicken filling to ensure it is flavorful and safe to eat.
  • Sauté onion and garlic in a pan until fragrant.
  • Add ground chicken, soy sauce, salt, and pepper to the pan.
  • Incorporate grated carrot and optional shredded cabbage, cooking until everything is tender and not watery.
  • Let the filling cool for a few minutes before filling the cups.

Making the Wrappers

  • Whisk together flour, water, a pinch of salt, and a bit of oil to make a basic batter.
  • Let the batter rest for 10 to 15 minutes, then cook in a nonstick pan until thin and set.
  • Stack the wrappers with parchment to prevent sticking.

Assembling and Cooking

  • Lightly brush one wrapper with oil and layer a second wrapper on top in a criss-cross manner.
  • Press the layered wrappers into a greased muffin tin to form cups.
  • Air fry the empty cups at 350°F for about 3 to 5 minutes until firm and lightly golden.
  • Fill each cup with the cooled chicken filling, ensuring they are not overfilled.
  • Return the filled cups to the air fryer for another 2 to 4 minutes until hot and crisp.

Notes

Serve with sweet chili sauce, garlic vinegar dip, or Sriracha mayo. Keep some extra cups unfilled for later, and enjoy the interactive dip station for guests.
